It comes from 100% Iberian pigs (pure) raised extensively, which fatten during the montanera months based on acorn and pastures from the dehesa. Traceability throughout the production process is double controlled; by external certifier and by the technicians of the denomination of origin.
* The montanera is the last phase of Iberian pig breeding, in which they feed on acorn base in the field. This time of year depends on several factors, but it is normally included between the months of October and March, coinciding with the period of maturation of the acorns of Encinas and Alcornoques.
It has a cure of approximately 2 years in our wooden dryer, which acts as a natural regulator of humidity and temperature.
